Ham and pea frittata
Lockdown has certainly made lunch at home more interesting. I’m always trying to think of something different to make. Well, if I can’t go out I may as well cook delicious food myself.
Frittatas are a great way to use up all sorts of ingredients in your fridge or freezer, so the perfect lockdown dish.
Today I made one using ham and peas. So quick and easy and absolutely delicious. I made it in a large frying pan so it came out lovely and thin but if you would like it to be a bit thicker just use a smaller pan. Enjoy!
The ingredients
1 tbsp vegetable oil
1 small onion, chopped
250g frozen peas, defrosted
6 slices of ham, chopped
6 large eggs
75g mature Cheddar, grated
The process
Heat the oil in a pan and fry the onions for about 10 mins until softened.
Add the peas and ham and stir through.
Beat the eggs thoroughly and pour over the pea and ham mixture.
Grate the cheddar on top.
Cook on the hob on a medium heat for about 10 mins until the bottom is set. Take care not to burn.
Place the pan under the grill for about another 10 minutes until the frittata is set and slightly browned on top.
