So today I’m back in the kitchen cooking chilli con carne. My inspiration comes from clearing out my kitchen cupboards. Well what else are you going to do in Lockdown! I made some lovely discoveries, including several spice mixes from The Spice Pioneer. Instant dinner inspiration.

Their chilli con carne was rich and delicious and this recipe produced enough for four portions…so we have another dinner waiting in the freezer.
The ingredients
1 tbsp vegetable oil
1 large onion, chopped
1 red pepper, chopped
500g beef mince
1 tin kidney beans, drained and rinsed
1 tin chopped tomatoes
1 Power Pod of Chilli con Carne mix
The process
Heat the vegetable oil in a pan. Fry the chopped onion and pepper until softened, about 10 mins.
Add the beef mince and stir through. Cook until browned, about another 10 mins.
Mix in the contents of the spice pod.
Stir in the beans.
Pour in the tomatoes and stir.
Simmer uncovered on medium for 20 mins until thickened.
Serve with rice and dollop of soured cream.
