Perfecting Julienne Vegetables with Microplane

I love a new gadget – anything to make life easier. So I was delighted to discover the new Microplane Y-Peeler with Julienne Blade. I couldn’t wait to try it out. As it’s summer and I’ve been lighting up the barbecue at every possible opportunity I decided to experiment with a new version of coleslaw. And my new peeler is perfect for creating uniform strips of vegetables.

Creamy beetroot, carrot, celeriac and chive coleslaw


1 cooked beetroot

2 carrots, peeled

1 celeriac, peeled

2 large handfuls of chives

1 small handful of mint

200ml mayonnaise

Slice the beetroot, carrots and celeriac with the Microplane Julienne Slicer.

Mix the mayonnaise with the chives and mint.

Combine the vegetables and mayonnaise mix.

A simple yet delicious recipe that goes perfectly with all my barbecued dishes.
