Today I’m back in the kitchen. Still missing my travels, I’ve found myself making dishes from around the world. And when I was sent a lovely Professional Serrated Peeler from Microplane, I knew I had to make some pan con tomate, one of my absolute favourite dishes I’ve eaten all over Spain.
This ultra-sharp stainless steel peer has a serrated double blade which means it easily peels soft skinned fruits and vegetables. So just perfect for peeling tomatoes. The recipe
Makes enough for brunch or a starter for two.
3 medium tomatoes
1 clove of garlic
1 tbsp chopped parsley
A slug of olive oil
Salt to taste
The process
Peel the tomatoes with the Microplane Professional Serrated Peeler. Chop them up small and place in a bowl.
Peel and crush the garlic and add to the tomatoes.
Chop the parsley and mix through.
Finish with a slug of olive oil.
Add salt to taste
Lightly toast some ciabata or slices of baguette. Top with the tomato mix and drizzle with oil olive before serving.
