Barbecue special: Pork steaks and cheesy peppers

Summer’s here and it’s time to get barbecuing with my magnificent new CharBroil barbecue. The Professional CORE B2 is an upgrade from my previous one which I literally barbecued into the ground. Now I have this stunning piece of machinery with its two burners and a handy little shelf above the cast iron grates which I’ve discovered is perfect for cooking vegetables on. It’s my all-in-one, fits-all-needs outdoor oven. Boy am I looking forward to creating a whole new raft full  of exciting barbecue recipes and tips to share with you.


Today I’m starting with something light and tasty with tender barbecue pork loins and tasty stuffed peppers. I made a basic marinade for the pork steaks. It’s really simple and adds an extra zest of flavour as well as helping with tenderising. Mix together 1 tbsp sweet smoked paprika, the juice of an orange, 150ml of ketchup and 1 tbsp of Worcestershire sauce. Spread generously over the loin steaks (two per person – this recipe is for two people). I like to marinade overnight to allow the flavours to develop properly but as long as you have a couple of hours that’s fine.

These little peppers are perfect stuffed and served as an accompaniment to the pork. Slice the top off, saving the lids for cooking. Run a knife around the inside of the pepper to remove all the seeds and core. Add four quartered cherry tomatoes, 3 tbsps tinned sweetcorn, 1 small dry chilli (crumbled) and 2 tbsps of cheddar to each pepper and top with a final slice of cheddar. Replace the lid and cover in foil ready to place on the shelf in the barbecue.

Turn on the barbecue. When it reaches 200C turn down to low to maintain the temperature and place the wrapped peppers on the shelf. They need to cook for 25 mins. After 10 minutes add the pork loin steaks to the grill below and cook for 15 mins turning several times. I like to get a nice blackened grill pattern on my steaks. Love the way the red LED light illuminates the knobs when it’s turned on.

Here’s the finished pork. Serve immediately with the unwrapped peppers for a delicious, light dinner.

There’s a new technology involving innovative TRU-Infrared cooking. Don’t ask me exactly what it means or how it works but I can tell you that the results are incredible. I’ve been barbecuing for  many years and have never produced such perfectly cooked, juicy meat. Seriously.

I’ve already mentioned the handy extra shelf above the grills. So far I’ve cooked corn, asparagus and stuffed peppers there and they were all wonderful. Lots more ideas coming for tasty veg accompaniments.

I also love the way it looks. It’s sleek and shiny, the gas bottle is hidden behind a door in its specially built-in bottle holder and the knobs light up in bright red when you turn it on. Fabulous.

And there’s a temperature gauge in the lid – never been able to properly control the temperature of my barbecue before. Also helps massively with cooking everything perfectly. There’s a lot of attention to detail with handy hooks for hanging your CharBroil implements on. And it’s on four heavy duty wheels, so easy for pushing around.
