These quantities are good for a big party. I took it to a braai at our neighbour’s house where there were about 12 people and it was easily polished off.
It’s another dish to make at a leisurely pace, layering your salad with love and watching it develop into this masterpiece. I like to use new potatoes because you don’t have to peel them which saves a lot of time. Oh, and for any vegetarians out there, if you add sweetcorn in place of the bacon it’s really good.

1kg new potatoes
9 rashers of streaky bacon
3 eggs, hardboiled
200g creme fraiche
200g mayonnaise
2 tbsps fresh chives, snipped into small pieces
1 Boil the potatoes for about 20 mins until a knife inserts easily through them.
2 Meanwhile, fry the bacon until it’s crispy and hard boil the eggs.
3 Mix together the mayo and creme fraiche.
4 Drain the potatoes and let them cool a bit, then slice them into bite-sized pieces.
5 Start assembling the salad in layers. Place a third of the potatoes on the bottom and combine with a third of the creme fraiche and mayo mix. Crumble three rashers of bacon over them, then grate one of the hard boiled eggs on top.
6 Repeat twice more until your ingredients are all finished. I put the potatoes into the bowl with the creme fraiche mix first so they are covered and then start the next layer with them.
7 Once you’ve finished all the ingredients, snip your fresh chives over the top.
