Spring arrived with a bang in London this April and I’m pleased to say I managed to squeeze in several barbecues while the heat was on. So I was thrilled to be sent this lovely new condiment from Hilltop Tracklements and couldn’t wait to start experimenting. A lovely new, versatile ingredient to add to my store cupboard.
This unique and novel condiment is sweet, spicy and savoury all at once and can be used in multiple ways.
It’s a delicious accompaniment to cheese and charcuterie platters. And it brings an interesting new dimension to breakfast, spread over toast and topped with smashed avocado and a soft-poached egg. Yummy.
But my favourite, just in time for barbecue season is as a glaze for multiple meat and fish dishes. Today I used it on pork belly slices, brushing it on one side and cooking the other side down on the barbecue. Then, when I turned the meat over, I brushed the side now facing upwards. I did this multiple times to let the flavours and moisture properly sink in. I also brushed it lightly again just before serving.
The result was a deliciously moist and tender pork belly that also had that slightly caramelised taste and a lightly blackened crunch. Irresistible.
There’s no doubt this honey is going to stay close at hand always to spice up any of my summer cooking. There’s no doubt I will continue experimenting all summer. You need some in your kitchen now!
