This is one of my favourite dishes from Spain, you get versions of it all over the country. Juicy prawns and plenty of garlic are the key ingredients and it’s important to cook it really quickly in a hot pan. I usually serve it with fresh bread and just bring the pan straight to the table for people to dig in.
Serves 2
350g raw peeled prawns
100ml olive oil
2 garlic cloves, peeled and chopped
1 small hot red chilli, chopped
Heat the olive oil on the stove and add the chopped garlic and chilli. Fry for about 3 mins until you can really smell the flavours. Pop the prawns in and cook for another 3 mins until they turn pink. Serve straight from the pan with fresh bread.
Oh I LOVE food like this….just diving in with a slice of Crusty fresh bread! Lush!
