So it’s December, and here’s my monthly recipe using my favourite ingredient – biltong.
This pate is the perfect party snack and created something of a talking point when I made it for a hen night recently. No one could believe what a fantastically ingenious idea it was to make pate with biltong and how delicious it was. Even better, it takes very little effort or time, so make a batch now for Christmas, I promise that your guests will be very happy.

200g button mushrooms, thinly sliced
1 small onion, chopped
50g butter
100g biltong, thinly sliced
250g cream cheese (I used Philadelphia with chives)
250g whipping cream, lightly whipped
Melt the butter in a pan and fry the onion until soft. Add the mushrooms and fry until lightly browned. Take off the heat and allow to cool.
Put the cooled mushroom and onion mixture into a blender and add all the rest of the ingredients.
Mix until the biltong is blended into the rest of the ingredients you have a thick, pate-like consistency.
Serve with crackers and crudites made from peppers and carrots.
