The sun is shining and the sky is blue…summer is here. And what better way to spend a summer’s evening than relaxing, sipping exotic cocktails? A real indulgence, I never really have a cocktail unless I’m on holiday…but hey we all need a bit of a treat in these days of Corona. So why not try these fresh and fruity concoctions made using delicious Mainbrace Rum. It’s created from a unique blend of two styles of rum, from Martinique and Guayana, to produce a smooth premium golden rum. And it’s yum! Here are my ingredients ready to go.
Planters Punch
My version of this classic cocktail is fresh and fruity. I used a mix of pineapple and tropical juice.
60ml Mainbrace rum
20ml grenadine
60ml pineapple juice
60ml tropical fruit juice
Ice
Mix all the ingredients together, stir well and serve.
Pina colada
It’s a classic. Simple and quick to make and evoking thoughts of tropical isles.
60ml Mainbrace rum
120ml pineapple juice
60ml coconut cream
Ice
Pour everything into a blender and blend before serving.
Pineapple ginger
Inspired by one of my neighbours – this is Holly’s favourite cocktail
60ml Mainbrace rum
100ml pineapple juice
Juice of one lime
A splash of ginger ale
Ice
Mix all the ingredients together, stir and serve
Poncha Regional
Poncha is a traditional drink from the island of Madeira. This is a regional version – the recipe came from my friend Gail who lives there. I used about a teaspoon of lemon skin and about half a teaspoon of honey as I didn’t want it too sweet, but add as much as your taste buds desire.
Juice of 2 oranges
Juice of 1 lemon
Equal measure of Mainbrace rum to juice
A bit of lemon skin pounded with sugar till it’s smooth
Honey to taste
Blend, strain, serve!
And here’s the rum – I love the bottle, too. Of course you don’t have to make cocktails, the rum tastes fabulous on its own, neat or over ice. But it is a bit of fun to bring some of that holiday feeling home with a feast of cocktails.
