The second half of 2021 was a good travelling time for me. With Covid-19 restrictions slowly lifting (though they did go back and forth a lot), my world was opening up again. What excitement! And one of the places I got to visit was the beautiful White Isle that is Ibiza. My first time to this Spanish jewel for a stay in the luxurious 7Pines Resort.
Set in a pine grove high up on the cliffs of Ibiza’s west coast, 7Pines has breathtaking far-reaching views of the Med and the legendary rocky island of Es Vedra. This uninhabited (by humans) island is said to be home to sirens and sea nymphs who tried to lure Odysseus from his ship in Homer’s Odyssey. It is also thought of as the holy island of the Tanit, the Phoenician lunar goddess of fertility and it is said that special sacrifices were made to her there during full moons. Either way it is a striking sight from the heights of 7Pines, making a dramatic statement on the horizon.
The resort is made up of a village of whitewashed houses and has three restaurants, three bars and a spa and wellness centre. The perfect place to recharge and relax while enjoying some of the best service you’ll ever experience. Here’s what I loved about my stay at 7Pines.
The luxury suites
How I love checking in to a truly exceptional hotel room. Well, a suite in this case. The large bedroom decorated in stylish shades of blue and white had the comfiest of welcoming beds at its centre. And there’s a whole wall of wardrobes down one side. Well you need wardrobe space to ensure you’re always looking your elegant best.
Next door the large living area opened out onto a covered patio with furniture with the garden beyond.
To one side was the kitchen area with fridge, sink and all the makings for a selection of cocktails (including the required equipment). My very own bar, now we’re talking!
Poolside luxury
The pool is the focal point of 7Pines. With its myriad loungers, stunning views and attentive service with food and drink delivered on demand, it draws you in like a magnet – never has pool time been so irresistible. Here’s the view from my favourite spot out towards Es Vedra. It was difficult to get up from that lounger once I’d settled in!
The Restaurants and Delightful Food
There’s no end to the foodie delights at 7Pines. The main restaurant, Cone Club is open for breakfast, lunch and dinner. Al fresco tables with expansive views make every meal even more enjoyable – get a table at the front and you’ll never want to leave.
For breakfast there’s a sumptuous buffet with tables of fresh fruit, pastries and Spanish delights. This plate is my idea of breakfast heaven – a combination of pan con tomate, jamon and guacamole made up from said buffet. There’s also a menu to order from.
There’s a poolside restaurant but you can also order dishes delivered straight to your sunbed. The menu offers a range of delightful salads and bowls including this Caesar salad with prawns – I ordered the extra avocado because I need extra avocado in my life.
As evening falls it’s time for sunset tapas. Settle in to one of the plush sofas overlooking the sea and enjoy a selection of Spanish favourites like patatas bravas (another of my favourites), tortilla, croquettes and more jamon.
The sweetest of jamon to savour – love the way it just melts in your mouth.
We also enjoyed a fabulous dinner in The View. This upstairs restaurant has a forty-metre glassed facade which opens up blending indoor and outdoor seating. And as the name implies it has something of a spectacular view. But it’s the food that’s the star of the show. Modern Mediterranean cuisine creatively interpreted with four and six-course tasting menus on offer. My favourite dish of the day – these incredible oysters.
The service
The staff at 7Pines can’t do enough to make sure you have the best stay you could ever dream of. Seriously, it’s like my every wish was anticipated with someone popping up before I’d even needed anything. From positioning umbrellas poolside and offering general Ibizan advice to serving up drinks and food. All done with a smile.
From the knowledgable sommeliers, barmen and waiters to the friendliest of reception staff, one of whom offered to show me around their home town any time. All because he came from Cadiz and that’s my family name. The welcome could not have been warmer or more heartfelt.
Chilling Out in the Spa
Have you ever seen such a stunning view from a spa before? It’s just as beautiful inside and there’s an impressive array of beauty treatments on offer as well as yoga, pilates and a comprehensively equipped gym. I enjoyed a Seven Aromatic Touches massage with an aromatherapy oil blend to match my physical and emotional needs. My therapist suggested eucalyptus and rosemary. Great choice.
Savouring the Sunsets
So when it’s time for the sun to set 7Pines transforms itself into a magical kingdom as daytime passes through dusk to darkness. Celebrate the setting of the sun with the daily sunset ritual in the comfort of Cone Club with its stunning 270-degree sea views. The DJ serves up his special ambient sunset soundtrack and plates of tempting tapas arrive along with the jugs of Cava sangria. Where has Cava sangria been all my life? My new favourite drink.
As the sun dips below the horizon the sky is lit up a kaleidoscope of colours.
And as darkness falls, fairy lights and twinkling stars light up the 7Pines life. It really is pure Ibizan magic.
7Pines reopens for the 2022 season on May 1.
