Perfect for a warm summer’s day (sorry if you’re shivering in the northern hemisphere), this salad is quick to make and the ingredients are a match made in heaven. I discovered that it also works well with strawberries when I couldn’t find watermelon in the shops one day. Simply remove the stalks and halve.
1.5kg watermelon, cut into bite-size pieces
70g feta cheese
2 red onions, thinly sliced into rounds
1 packet fresh mint leaves, roughly torn
Juice of 1 lemon
Olive oil to drizzle
Layer the watermelon, onion and mint on a platter and crumble the feta over the top.
Squeeze the lemon over the top and drizzle with olive oil.
