Recipe: Chicken fajita with The Spice Pioneer

I love a fajita and it’s been way too long since I had one. I remember the days when Mexican restaurants were all the rage in London and nights out consisted of plates of fajita and tequila lay backs. All a bit messy! Fun though.

Now, thanks to the people at The ¬†Spice Pioneer there’s a handy little Power Pod which is a fusion of herbs and spices to bring your fajita to life. It’s one of a tasty range of these pods which can help you to recreate a range of dishes from around the world…so at least you can enjoy some travel on a plate in these days of no-travel Corona.

Today we’re evoking some Tex-Mex flavours. This recipe serves four.

The ingredients 

1 fajita seasoning from The Spice Pioneer

2 garlic cloves, crushed

1tbsp vegetable oil

2 Mixed bell peppers, sliced

1 onion, sliced

4 skinless chicken breasts

The process

In a large bowl, mix the fajita seasoning, garlic, onion, oil an peppers. Add the chicken. Mix to coat evenly and marinate for 10 mins.

Stir fry ina large frying pan on medium to high heat for 10-12 mins or until the chicken is cooked through.

Enjoy in heated tortilla wraps with guacamole, salsa, sour cream and a sprinkle of cheese.

Today I made my own salsa as I couldn’t find any in the supermarket (another hazard of Corona times). I simply chopped up fresh tomato and mixed with dried chilli and a slug of olive oil. So easy and so delicious and fresh tasting – I’ll never buy ready made again!
