Dishes with the finest carrot julienne: the Microplane Gourmet Series

Today I’m back in the kitchen trying out my fabulous new Microplane Gourmet Series Fine Julienne Slicer. With its ultra sharp, stainless steel blade you’re guaranteed matchstick slices of carrot, courgette, cucumber, pretty much any vegetable you would desire.

It’s certainly perfect for preparing ultra-thin, delicate carrots. Today I made a tasty carrot sambol chosen from a lovely new recipe book Sri Lanka: The Cookbook. A delicious mix of matchstick carrots with onion, green chilli, tomato, coconut and lime juice.

Great ideas with matchstick carrots

Carrots are a great vegetable to keep handy in your kitchen. There are so many possibilities for making dishes with this versatile ingredient. Salads are the obvious choice. Mix with shredded cabbage to add a dash of colour and a bit of extra sweetness to a traditional coleslaw. Or combine with thinly sliced red and yellow peppers and shredded spring onions. Top with a zingy lime and fish sauce dressing for a Thai-style slaw. Lightly toast a tablespoon of cumin seeds and crush in a mortar and pestle. Stir through the carrot and include on chopped fresh green chilli for an Indian-style side dish.

You can also create many delicious soups. Pour vegetable stock over the carrots and bring to a simmer. Add fresh coriander and black pepper and cook on a low heat. Mix with a tin of drained butter beans and a teaspoon of curry powder, cook through and blend. Or for a bit of zest add the juice of an orange.

Or why not enjoy an aromatic star anise puree  – it makes a wonderful accompaniment to any roast.
