Celebrating summertime with Finders

We’ve been having such glorious weather in London, it almost seems like I’m on holiday…even though we’re still in semi-lockdown. The perfect excuse to spend time in the garden creating new cocktails and in this case, alcoholic iced lollies, using the fabulous spirits range from Finders. Now doesn’t that sound good?

Created by Yorkshire-based Sloemotion Distillery, there are two varieties of vodka, three of gins and two of rum. I particularly loved the zesty Sherbet Lemon vodka. You can also enjoy Fruits of the Forest gin which includes 19 botanicals and has an incredible aroma of berries. For rum lovers there are two exotic flavours:  Chocolate & Coffee or Orange & Raisin rum. So yummy. And the bottles are so beautiful, too.

And what could be nicer on these balmy London days than a refreshing iced lolly? Go on, treat yourself!

Finders Fruits of the Forest Gin Iced Lollies

Makes 6-8

1 litre double cream

250ml Greek yoghurt

250g mixed Fruits of the Forest berries (frozen)

200g icing sugar

6 tablespoons Finders Fruits of the Forest Gin.

Add all ingredients into food mixer – whizz to blend.  Taste for sweetness and alcohol content; add more if desired.

Pour into iced lolly moulds leaving a little space at the top and freeze overnight.

To serve, dip each mould quickly into a bowl of hot water until lollies can be removed easily.

Finders Orange and Raisin Rum Iced Lollies

Makes 10

100ml Finders Orange and Raisin Rum

600ml Cola ( or desired mixer eg. pineapple juice for a Pina Colada style Iced Lolly)

Slice of fresh orange to decorate.

In a large mixing jug add all the ingredients and mix.

Pour into each of the lolly moulds, leaving a little space at the top.

Add a slice of orange into the lolly mould – or garnish of choice.

Freeze overnight.

To serve, dip each mould quickly into a bowl of hot water until lollies can be removed easily.
